Gluten and Dairy Free

Mecarla1 Comment some of you know, I have been really sick the past ten weeks.  Been in and out of the doctor and have had every test done that is known to man. I have been really bummed out about the whole thing.  Let me rephrase that....I HAVE BEEN EXTREMELY BUMMED OUT about this whole mess.  I am starting to feel like I may never be "myself" again.  Went to the doctor a few weeks ago and he took me off of gluten and dairy.  At first I cried and thought to myself, "what am I suppose to eat?"  Everything that I would typically eat had gluten and dairy in it.  It is amazing to me how much you crave something once it is taken away from you.  It really made me think of how much I took for granted when I was healthy! After a week of feeling sorry for myself and eating carrot sticks, plain lettuce, and cucumbers, I started doing some online research. Dan encouraged me to crawl out of my rock that I had been hiding under and start living again!!!!  I came across this wonderful website called gluten-free goddess.  It has been LIFE SAVING!!!!  Who knew you could cook such fabulous things without gluten and dairy????  Dan and I have made several recipes this week from her website and they have turned out FABULOUS!  We have had such a wonderful time cooking together, and we get all excited about how it is going to turn out.  The picture above is the Quinoa Taco Salad.  It was so wonderful, and I highly recommend that you try it.   I sprinkled goat cheese on mine, and Dan added some cheddar. The salads were so pretty I just had to take a picture and share.  Even thought I can't eat or drink very much, we added the REDBRIDGE beer (gluten-free) and Dan's famous homebrew to the photo to add some characture!

The gluten-free goddess website has given me something to look forward again!!!!   I can't wait to come home at night and try a new recipe! I haven't had very much hope lately, and cooking healthy and having fun in the kitchen has given me a whole new outlook on life.  Dan and I have been cooking together again, laughing and enjoying each other's company in the kitchen.  It has been something that we have both needed.  We have been very stressed out through all of this.
