So around here, we have been tryin' to lose a few pounds, I have about 4 more to go, and Dan has about 180.....ha! ha!  Thought I would share a great recipe that Dan and I love to make for lunch......it is healthy, cheap, and packed with "good for you" food!!!!  We have been out exercising every day.....walking and running our butts off....taking the kids on long hikes in the woods. (Sometimes we take them way out....and leave them there....like the Hansel and Gretel story!) Hope you enjoy the recipe! Tabbouleh With Shrimp and Feta

1 cup bulgur

1 packed cup packed parsley, chopped

1/4 cup fresh lemon juice

2 tablespoons olive oil

Pinch salt

Pinch ground cumin

Pinch dried mint

8 ounces medium, cleaned, cooked bay shrimp

1 large seeded and chopped cucumber

1 chopped tomato

1 cup chopped scallion

1/4 cup feta cheese

Bring 1 1/2 cups water to a boil in a saucepan, and add bulgur. Bring liquid back to a boil and then cover the pot, turn off the heat and let sit for 25 minutes. Meanwhile in a bowl whisk together 1 teaspoon of the parsley with the lemon juice, olive oil, salt, cumin and mint. In another bowl, throw everything else in.....add the bulgur, and liquid, mix it up and throw it in the refrigerator for a few hours.........take it out, put some in a bowl, grab a fork and ENJOY!
